Why a PINK chef's coat?

Simply put, I carry my Dad's legacy with me through my cookbook, cooking and everyday I am writing my food columns, he is always with me. I carry my Mom with me through a silent reminder of her struggle with breast cancer that took her life, as well as the lives of many other women who have dealt with, and are still dealing with, this horrible affliction. Besides, why not pink? It makes a man look good!

Not Just Pumpkin Cookies

These amazingly high cookies are the best cookie you will have this year. Gooey with chocolate, scented with molasses and sweet with cranberries, how can you say no to another helping? These cookies truly are a New England classic and will ease your shopping tensions.

  • 2 cup(s) flour
  • 1 3/4 cup(s) old-fashioned oats
  • 2 teaspoon(s) cinnamon
  • teaspoon(s) baking soda
  • 1 teaspoon(s) nutmeg
  • teaspoon(s) dired ginger
  • 1 3/4 sticks butter or margarine, softened
  • 2 cup(s) sugar
  • 1/2 cup(s) molasses
  • 1 3/4 cup(s) canned pumpkin
  • 2 eggs, beaten
  • 1 cup(s) chocolate chips
  • 1 cup(s) dried cranberries

Not Just Pumpkin Cookies Directions

  1. Preheat oven to 350-degrees F. Spray a cookie sheet with nonstick cooking spray. In a large bowl, combine first six ingredients well. In another bowl, beat butter, sugar and molasses, on high, until light and creamy. Add the pumpkin, beaten eggs, chocolate chips and cranberries and continue beating another 10 seconds, or until well incorporated. Reducing the mixer to low, beat in the dry with the wet until mixed well.  Using a tablespoon, drop dough onto prepared baking sheet using a heaping tablespoon measure. Leave an inch in between cookies. Bake 14-15 minutes, or until the bottom is lightly browned. Remove, let cool a few moments before transferring to a platter or rack to cool slightly before eating these gooey treasures.
  2. Makes about 36 mile high cookies.
