Why a PINK chef's coat?

Simply put, I carry my Dad's legacy with me through my cookbook, cooking and everyday I am writing my food columns, he is always with me. I carry my Mom with me through a silent reminder of her struggle with breast cancer that took her life, as well as the lives of many other women who have dealt with, and are still dealing with, this horrible affliction. Besides, why not pink? It makes a man look good!

Deliciously Orange Pumpkin Butter

Almost as popular as apple butter, this pumpkin butter can be used on everything from pancakes, English muffins, breakfast muffins, toast or as a dip for fresh fruit for the kiddoes. Any way you decide to use this lively flavored "butter", be sure to add a small bowl of it to your well-laden Holiday table this year.

  • 1 cup orange marmalade
  • 1 cup orange juice
  • 1 (29-ounce)can pumpkin
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon vanilla

Deliciously Orange Pumpkin Butter Directions

  1. Add orange juice and marmalade to a medium saucepan and whisk well. Bring to a boil over medium high heat, continuing to whisk a couple times. When boiling, remove from heat to cool slightly.
  2. Transfer to a blender or food processor and puree until as smooth as possible.
  3. Transfer back into original saucepan with remainder of ingredients and bring to a boil over medium high heat.
  4. Place lid on askew and reduce heat to low. Simmer 10-15 minutes, stirring occasionally, until it has thickened slightly. Remove from heat to cool before transferring to a bowl. Cover and refrigerate at least 2 hours, or until completely chilled.
