Why a PINK chef's coat?

Simply put, I carry my Dad's legacy with me through my cookbook, cooking and everyday I am writing my food columns, he is always with me. I carry my Mom with me through a silent reminder of her struggle with breast cancer that took her life, as well as the lives of many other women who have dealt with, and are still dealing with, this horrible affliction. Besides, why not pink? It makes a man look good!

Sweet Apple Streusel Kuchen

Usually a flat cake cut into small rectangles, it is generally enjoyed during the spring and summer months using colorful berries. During the winter months, warmly spiced variations are sought after, even using dried fruits. Enjoy this simple recipe with New England in mind. A great buffet item or simply curl up under a blanket with a cup of cocoa to nibble.

  • Nonstick cooking spray
  • 2 cups diced apple
  • 1 cup flour
  • 4 teaspoons sugar
  • 1/2 teaspoon each cinnamon and baking powder
  • 1/4 teaspoon nutmeg
  • 1/2 cup plus 2 tablespoons milk
  • 1 egg, beaten
  • 2 tablespoons melted butter or margarine
  • Crunchy Topping:
  • 6 tablespoons flour
  • 4 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons melted butter
  • 1 tablespoon maple syrup

Sweet Apple Streusel Kuchen Directions

    Grease an 8-inch square pan with nonstick cooking spray; set aside. Preheat oven to 350-degrees F. 
    In a large bowl, combine flour, sugar, cinnamon and baking powder, blending well. Add milk, egg and melted butter, stirring until well combined. It doesn't have to be completely smooth. Fold in apple and pour into prepared pan, set aside while making streusel topping.
    Blend all ingredients in a small bowl until everything is well incorporated. Sprinkle over kuchen and bake 20-22 minutes, or until you see the sides pulling away from the pan. Remove to eat hot or cool completely before enjoying
