Why a PINK chef's coat?

Simply put, I carry my Dad's legacy with me through my cookbook, cooking and everyday I am writing my food columns, he is always with me. I carry my Mom with me through a silent reminder of her struggle with breast cancer that took her life, as well as the lives of many other women who have dealt with, and are still dealing with, this horrible affliction. Besides, why not pink? It makes a man look good!

Authentic American Chop Suey

Sure, many of us have had the thickened, cheesy "eat with a fork" preparation of the same name and probably most of you would say it is superior. I have enjoyed it as well! But what truly brings back memories of the classic New England comfort food is the way it is meant to be made. I didn't care for it as a child because my father would add larger than life chunks of peppers and onions to the mix. But as an adult, it is "wicked" good! So grab a large spoon and dig in to this subtly Italian spiced pasta dish, close your eyes(If you are a true Yankee)and harken back to when your mother or grandmother made it.....it won't take long.


For 4 people


  • 1/2 (1 pound)box elbow macaroni
  • 1 large green bell pepper
  • 1 tablespoon oil
  • 1 small onion
  • 6 -8 ounces ground beef
  • 1 (28 ounce)can stewed or crushed tomatoes
  • 1 tablespoon Worcestershire sauce, optional *
  • 1 teaspoon each oregano,garlic powder and sugar
  • Salt and black pepper to taste

Authentic American Chop Suey Directions

  1. Cook macaroni according to package directions. Drain and set aside while still in colander to completely dry.
  2. Have, core and dice green pepper and add to a large saucepan with the oil. Peel and dice the onion, also adding to pot. Cook over medium heat, stirring often, until crisp tender. Add beef, mix well to break up and continue stirring and cooking until ground beef is cooked through; drain well.
  3. Make sure canned tomatoes are well crushed and add(with liquid)to burger mixture along with all spices. Bring to a boil over medium heat. Add macaroni, stir to combine well and let cook an additional couple minutes to bring it up to temperature.
  4. Remove from heat to serve hot.
  5. Makes about 4 servings
  6. What is great about this, and all American Chop Suey recipes, is the leeway one has when wanting to alter the preparation and ingredients. Substitute other colored bell peppers, add hot, minced peppers, peas, green beans, and even fresh tomatoes. If you choose, dice 3 tomatoes and simmer in a cup or two of pure tomato juice or a vegetable blend of juices until tomatoes have softened. Use as a substitute for the canned variety. Go ahead and opt for ground turkey, chicken, pork or ground chuck if desired.
  7. * Some texts and footnotes give soy sauce the origninal role in this New England dish, including Serious Eats. Although I strongly disagree with this supposition, perhaps this is the reason of the Asian-sounding name?
