Why a PINK chef's coat?

Simply put, I carry my Dad's legacy with me through my cookbook, cooking and everyday I am writing my food columns, he is always with me. I carry my Mom with me through a silent reminder of her struggle with breast cancer that took her life, as well as the lives of many other women who have dealt with, and are still dealing with, this horrible affliction. Besides, why not pink? It makes a man look good!

Skillet Caesar Salad with Creamy Lemon Dressing

This recipe may look like a lot of work, but by doing the croutons and dressing up ahead of time, you will be ready for a flavorful lunchtime meal for two or a great side dish for that Italian fare you had been planning.

  • 1 romaine lettuce heart
  • 2 tablespoon(s) garlic flavored olive oil
  • 1/4 cup(s) shredded parmesan cheese
  • Creamy Lemon Dressing:
  • 1 cup(s) mayonnaise
  • 1/2 cup(s) light cream or half-and-half
  • 1 tablespoon(s) lemon juice
  • 1 teaspoon(s) black pepper
  • 1/2 teaspoon(s) minced garlic in oil
  • 1/4 teaspoon(s) salt
  • Simple Black Pepper Croutons:
  • 1 slice bread
  • butter flavored non-stick cooking spray
  • 1/2 teaspoon(s) cracked pepper
  • 1/4 teaspoon(s) garlic powder
  • 1 teaspoon(s) grated parmesan cheese

Skillet Caesar Salad with Creamy Lemon Dressing Directions

  1. Trim away any brown or discolored leaves or leaf edges. Take a sliver off the stem end to get rid of the brown part.
  2. Heat oil in large skillet over medium-high heat and saute until well browned all around. Be careful of any splattering grease. You may need to turn it a couple of times.
  3. Reduce heat to low, cover and simmer 4 minutes, no longer.
  4. Remove lid and place romaine on a serving plate. Pour Creamy Lemon Dressing over the top, sprinkle Parmesan cheese and Black Pepper Croutons before serving.
  5. Creamy Lemon Dressing:
    Combine all ingredients in a blender of food processor until as smooth as possible. Cover and set in refrigerator until needed.
  6. Simple Black Pepper Croutons:
    Spray both sides of the bread with cooking spray, cube and set aside. In a bowl, combine pepper, garlic and cheese. Add the bread cubes and toss until evenly coated. Bake in a preheated 375-degree oven for 12-15 minutes or until well browned.
